The Art of Plating: Where the Story Begins
"Every dish tells a story" isn't just a tagline at Prose Kitchen & Bar — it's how our kitchen thinks about the art of plating. Before a plate ever reaches your table at our Woodland Hills restaurant, it's been composed with the same care a writer gives a sentence: rhythm, contrast, and a satisfying finish.
The art of plating, for Chef David Gussin, is where technique meets emotion. Color, height, and negative space all play a role. A dish like our Charred Octopus Tostada is built in layers — achiote-orange octopus, corn crema, cotija, and a bright pineapple salsa — each element placed so the first bite and the last taste equally considered.
Beauty in Service of Flavor
We never plate for looks alone. Every choice on the plate exists to make the dish taste better. The flaky salt on our Padrón Peppers, the char on our asparagus, the jammy egg gribiche spooned just so — presentation and flavor are the same conversation.
That discipline comes from years in acclaimed kitchens like STK, Fig & Olive, and Cleo, where Chef David learned that restraint is often the boldest choice. At Prose, that experience meets California's seasonal bounty to create plates that feel both refined and genuinely warm.
See the Art of Plating for Yourself
Photos only tell part of the story. Browse our current menu to see what's on the plate this season, then book a table and experience the art of plating in person. You can also reserve directly through OpenTable.
The best way to appreciate the art of plating is to see it in person. Dinner is served nightly from 4:30 to 9:30 PM, and happy hour runs daily from 4:30 to 6 PM, so there is always a moment to slow down over a plate that was built with intention. For larger gatherings, our team also hosts private events in the heart of Woodland Hills, where the same care goes into every course.
